A Decadant Seasonal Salad

As late winter can feel like a slog and seasonal eating a bit of a drag, Iβm including a seasonal recipe that really highlights the flavors of winter in a fresh, light way to stir your taste buds for Spring.
This salad can have any variation that you choose. It would be great with some diced pears! I said that it serves two, this is a large meal size salad and could easily serve four as a side. An easy time saving tip is to purchase pre-cooked beets. I get a package of vacuum sealed beets from Costco that are perfect to add to salads!

This looks delicious! My husband jokes that 'salad' is my favorite food. I think he's right π They are so versatile π₯ I love putting fresh pears and walnuts on a salad. I just purchased a bunch of kale this weekend. Looking forward to trying it. Do you usually let the kale sit with the dressing (or massage it) for a bit before eating?
